Your Favorite Blueberry Banana Bread

This unique recipe produces one 9x5 inch loaf of delish blueberry banana bread. It could fill up 10 hungry mouths and may gratify everyone's taste buds. 1/2 cup fresh blueberries, 1 5/8 cups all-purpose flour, 1/2 cup quick cooking oats, 1/2 cup chopped pecans, 1 teaspoon baking soda, 1/4 teaspoon salt, 1/2 cup shortening, 1 cup white sugar, 2 eggs, 1 cup mashed bananas,


Pre-heat the oven to 350 degrees F (175 degrees C). Prepare a 9x5 inch loaf pan by coating it using oil or cooking spray, and coating it all round using flour.

In a medium bowl, mix blueberries with 2 tablespoons of flour. Toss and gently blend them together with oats, nuts, 1 1/2 cups flour, soda, and salt.

In a big container, cream shortening completely. Carefully pour sugar, beating following each addition until light and even. Stir in eggs gradually, adding one egg at once and beat meticulously just after every addition. Incorporate mashed banana. Pour in blueberry mixture to creamed mixture. Mix with a spatula just till smooth, moist, and free of big lumps. Move batter into greased loaf pan.

Bake for 50 to 55 minutes. Assess completeness by sticking a wooden toothpick within the center of the loaf. It must emerge clean. Allow the newly baked blueberry banana bread to cool in loaf pan for ten minutes. Take out from pan, and let it cool thoroughly on a wire rack before slicing. Slice and then serve!
