What Is Ghost Pepper Wing Sauce

Buffalo wings were once an obscure bar food that only a handful of restaurants carried on their menus. Their popularity has exploded in recent years, so much so that there are now whole chains of restaurants built around them. Frozen and fresh versions are sold in supermarkets, some with ghost pepper wing sauce.

The sauce is the key ingredient to any wings. Without it, you will just have roasted or friend chicken, and not real buffalo wings. There are lots of ways you can go with the sauce -- traditional, mild, lemon pepper, sweet and sour and lots of other options. If you like yours spicy, you may want to try ghost peppers.

For extra spicy wings, try using naga bhut jolokias, also known as ghost peppers. They are grown in India, where generations of families have used them as a prized ingredient in curries and other foods where spice is a necessity. They are so hot that they are considered the hottest peppers in the world, so you don't have to use a lot to make your dish really hot.

They are certified as the hottest pepper in the world because they have been rated at one million scovilles on the Scoville scale. This scale is a measurement of the heat in the capsaicin of a pepper. Capsaicin is where all the heat lies, and it was measured and pioneered by Wilbur Lincoln Scoville, a chemist. Mr. Scoville wanted a way to rate the world's abundance of chili peppers, so he invented his namesake scale in 1912.

Saucing your wings with these peppers means you really want some heat. In today's global culinary scene, it shouldn't be too hard to find them. Just remember that handling these peppers will cause runny noses, watery eyes and possibly irritation if you don't wear gloves. Try to find dried ones, which makes them a little easier to handle.

People who work in a pepper factory often wear eye protection, gloves and even masks over their noses to stop the pungent smell from irritating their mucus membranes. It also prevents spray from juicy peppers from hitting their eyes, which can feel almost as bad as being doused in pepper spray. Take a cue from these workers and wear protective gear if you are going to make your own sauces at home.

If you prefer to use a premade sauces, check the ingredients before you throw the bottle in your cart. Some have nothing but jolokias in them, while others are a mix of ghost peppers and others that are milder. If you are not used to heavy heat or are using them for a party where others might be sensitive to the heat, you may want to try the blend before going for the full-on real deal.

If you are looking for something to spice up your next party, try food made with ghost pepper wing sauce. It will kick up your food a notch and get people talking. Just make sure they know what they are getting into, since some of your guests could have a sensitivity to heat or spice. As long as they know they are about to bite into something with an ultra hot sauce, they can only blame themselves for the burn.
